Salsa Sorta

This is such a yummy and filling recipe. And good for you, too!

Great as a side dish with chips or even as a topping to salads or any mexican dish. Can be doubled or halved easily

2-4 tomatoes (depending on size), chopped
2-4 avacadoes (depending on size), chopped
1 bunch green onions, chopped
1 bunch cilantro, minced
2 cans corn, drained
2 cans black-eyed peas, drained
2 envelopes Good Seasons dry italian dressing mix
cumin
chili powder

Mix all the veggies and beans in a bowl. Make up one of hte envelopes of dressing with oil and vinegar and pour over the salsa. Then sprinkle the remaining evelope of dry dressing mix over the salsa and mix well. Season with cumin and chili powder to taste.

Inside out ham or turkey sandwiches

I don't know where this idea came from. I know it's not mine, and some of you may already do this. I just discovered it and loved it. ENJOY!


3-4 slices of turkey or ham
3-4 whole wheat pretzel sticks
1 slice of cheese
2-3 lettuce leaves

It's pretty self explanatory, wrap meat, cheese and lettuce around the pretzel stick and eat. It's YUMMY!

Cucumber Salad


I'm not on weight watcher's so I don't know anything about the points involved but I'm a vegetarian always on the look out for stuff that I can eat as a main course and serve as a good side dish to my husband's slab of meat for the night. I love taking this on picnics.

Cucumber Salad
Ingredients
         1 medium cucumber, chopped
         1 (8.75 ounce) can whole kernel corn, drained
         1 (16 ounce) can stewed tomatoes, drained and sliced
         1 green bell pepper, chopped
         1 red bell pepper, chopped
         2 tablespoons red wine vinegar
         1 tablespoon crushed red pepper flakes
         1/2 teaspoon garlic, minced
         1/2 teaspoon cumin
         1/4 teaspoon dried cilantro   (I use fresh)
         1/4 teaspoon salt
         1/8 teaspoon ground black pepper

Directions
In a large bowl, toss together the cucumber, corn, tomatoes, green bell pepper, red bell pepper, and red wine vinegar. Season with crushed red pepper flakes, garlic, cumin, cilantro, salt, and black pepper. Cover, and chill at least 30 minutes before serving.
