And good for you, too!<br /><br />Great as a side dish with chips or even as a topping to salads or any mexican dish. Can be doubled or halved easily<br /><br />2-4 tomatoes (depending on size), chopped<br />2-4 avacadoes (depending on size), chopped<br />1 bunch green onions, chopped<br />1 bunch cilantro, minced<br />2 cans corn, drained<br />2 cans black-eyed peas, drained<br />2 envelopes Good Seasons dry italian dressing mix<br />cumin<br />chili powder<br /><br />Mix all the veggies and beans in a bowl. Make up one of hte envelopes of dressing with oil and vinegar and pour over the salsa. Then sprinkle the remaining evelope of dry dressing mix over the salsa and mix well.
